Zacusca de peste recipe (fish zacusca)
 
Items Used
 
1,5kg fish (Mackerel or Carp) 
100g oil
2 spoons flour
1 small cucumber in vinegar
200 ml vinegar for the cucumber 
1 carrot
1 parley branch
500g tomatoes
2 onions
2 teaspoons wine
2 laurel leafs
10 bell pepper
   
Clean the fish , wash it, cut it. salt it, then dry it, and coated it with flour then fry it. Separately fry the onion and boil in water the cucumber, the carrot and the parsley, all cut into pieces.
   Meanwhile boil the tomatoes strain or sieve them, mix them with the carrot, cucumber, parsley ,the fried fish and the bell pepper which has been cut into strips.  Put them all for 30 minutes in the oven at 180F or 350C and serve it cold.
