Toba de Porc or Pork Drum Recipe

 

 

 

            Ingredients:

 

 

·         2 pork legs

·         2 pork kidneys

·         1 pork tongue

·         2 pork ears

·        1 heart

·         ½ pork head

·         4oz/100g rind

·        3 laurel leaves

·         2 cloves garlic

·        1.1 lb/ 500g lean pork meat

·         1 pork bladder

·        ground pepper

·         salt            

 

 

 

Directions:

 

 

1.      Leave the bladder in cold water over night.

2.     Properly wash the kidneys and leave them in water and vinegar over night.

3.      Boil the head, legs, ears and heart in salted water with laurel leaves and pepper, until the meat falls off the bones.

4.      Boil the tongue, kidneys, rind and meat for about an hour.

5.      Get the tongue rid of its thin skin.

6.     The water should become lower until it gets as much as the meat quantity.

7.      Properly pound the garlic.

8.      Thinly slice the meat and knead it while it’s still warm with garlic, pepper, salt to your taste.

9.      The bladder has to be properly washed with water and vinegar and filled with the sliced meat and the thickened water that the meat has been boiled in.

10.   The Bladder has to be properly sewn and boiled in salted water for about 15 minutes.

11.  We put it aside until it gets a little cold between 2 little boards to get drum-shaped (“toba” is the Romanian word for drum). We can even expose it to smoke to rhyme with the ravishing flavor of boiled “tuica” (plum brandy) that has invaded the national holiday atmosphere and has made the phials green by themselves in the police office files.
