Squash Beans Recipe
This is a traditional Romanian side dish.
Food and amounts to 6 servings:
• 300g beans
• 100g
lemon
• 200g oil
• 3 g pepper
• 80g pickled cucumber
• 100g olive
• 10g paprika
• 15 g salt
• 80g
tomatoes
Preparation:
Wash the beans and let them soak overnight. In the next morning boil the beans in water and make sure
you change the water three times. The beans should be boiled until the bean can be broken between the fingers.
Fry the
beans together with pitted black olives for about 5 minutes. Mix them then pour oil little by little.
After mixing add lemon
juice, salt, pepper and paprika.
Put it on a plate and ornate it with tomato and cucumber slices. Serve with toasted bread. You
can also serve it with fried onions and sprinkle with minced parsley.
