Salata de vinete (Eggplant salad) Recipe
This is delicious and light and it is usually made for special occasions, including Christmas, Easter and New Year’s Eve.
Ingredients:
2.2 lb/ 1kg eggplants
1 tablespoon apple vinegar
1 glass oil
1 big red onion
salt
ground pepper
2 tomatoes
3-5 garlic cloves
1-2 tablespoons sour cream
a bit of sugar
Directions:
Fry or roast the eggplants in a frying pan.
Peel the eggplants and salt them.
Put them to be drained.
Finely chop the onion and mix it with vinegar.
Pound the garlic
Mix the eggplants with oil, stirring continuously until it becomes a paste.
Add the onion with the vinegar and sprinkle some pepper too.
Add the garlic, the sour cream and the sugar.
Decorate them with tomatoes slices.
There are people that like it simple without onion, garlic or sour cream.
