Moldavian Tripe Soup
Food Items needed and amounts to 6 servings:
• 1kg beef tripe
• 500g boiled beef
• 120g
onions
• 40g carrots
• 40g celery
• 40g parsley root
• 3 eggs
• 100 ml vinegar
• 3g pepper
• 15g salt
• 30g rice
• 20g lovage and parsley leaves
Preparation:
Clean the tripe and wash it several times in cold water
and then rubbing it with a lot of strength with salt or corn flour. Slice the beeg tripe into thin fillets.
Put the beef
tripe to boil with boiled beef and salt into two liters of cold water. While it boils you have to constantly remove the foam formed
at the surface.
After removing the foam, add whole greens leaving them to a soft fire to boil for 3-4 hours.
Once
you remove softened greens, and boiled beef tripe that you previously cut into thin fillets
If juice is not quite clear, add
two beaten whites egg "snow" to be collected then with the spoon for the foam.
Place cooked rice in a bowl, tripe, beef, with
the collected beaten yolks, along with vinegar, salt and white pepper and is topped with lovage and parsley finely minced.
