Mamaliga or Polenta Recipe
Mamaliga is the Romanian version of polenta
Items needed
500 gr maize flour
(corn meal),
1L and a half of water
1 teaspoon of salt.
Put the water in a cast-iron kettle to boil. When the
water starts to boil put a teaspoon of salt in. After a few minutes put all the maize flour in it and use a facalet (spatula (wooden
stock of 30 cm long and 2cm thick) to separate the maize flour in 2. Let it boil on a low flame for about 30 minutes then
start mixing good, pressing with the facalet on the cast-iron kettle's walls. At the end hold the facalet straight in the mamaliga
then rub it between hands and take it out fast. If there is mamaliga on it then it means it gotta boil more.
