Gizmo Recipe
 
This along with the Cheese Steak are traditional Philadelphia sandwiches.  Though, this is found traditionally mainly in the fishtown/Kensington/Post Richmond/Frankford sections of the city.
 
Items needed
 
4 6 inch Italian or French rolls or a 24 inch loaf
Marina sauce
Olive Oil
8 slices of provolone
8 ounces of cheese
Cheeses
part-skim mozzerella
provolone
Parmesan
Romano
Optional Cheeses
fontina
asiago
 
Directions
 
First bake the bread in a 350 degree oven for 15 minutes.  Remove fron the oven and raise oven temperature to 550 degrees.  Slice the bread almost all the way through.  Coated both sides with olive oil.  Then coated with the sauce followed by the provolone cheese.  Finally add the rest of the cheese on top.  Place in the oven for 10 minutes or until the cheese is goeey.  Then turn on the broiler and bake until cheese starts to brown.
