Ciorba de perisoare (Meatballs soup) Recipe
Ciorba de Perisoare is a tradition Romanian soup which is a meal in itself.
Ingredients:
1 bone without marrow
1 parsley bunch
1 lovage bunch
1 celery root
1 parsley root
2 tomatoes
2 tablespoons salt
1 yolk
vinegar or lemon juice
2 tablespoons sour cream
1.1 lb/ 500 g meat
1 onion
1 and ½ tablespoon rice
1 egg
Directions:
Boil the bone in water.
Remove the foam and add the chopped vegetables.
After it’s properly boiled, add the peeled off and chopped tomatoes.
Leave it to boil for a while.
Sour the soup with vinegar or lemon juice or even with borsch.
Put the meat into the Meat grinder for mincing it.
Add the finely chopped onion, the rice, egg, salt and pepper.
Properly mix them.
Shape them into little balls by hands and put them in the soup.
After the meatballs are boiled, remove the pot from the fire.
Dress the soup with a whisked yolk and add some sour cream
Decorate it with some chopped parsley and lovage.
